My Favorite Summer Fruits!

summer-fruit

Summer brings a bountiful harvest of tastes, colors, textures, and super nutrients in the form of FRUIT! This is my favorite time of year to visit my local farmers market and marvel at all the colors and nutrients around. There are so many wonderful choices, but there are definitely a few that pack a greater nutritional punch! Continue reading

Triple Berry Skillet Cobbler (GF)

Triple-Berry-Cobbler

It’s summer! And that means an abundance of colorful and nutritious fruit! Not only do we love eating the raw fruit – they’re definitely sweet enough on their own – but why not get a little frisky in the kitchen and make a cobbler or crisp out of them (can anyone tell us the difference between the two? Comment below with your thoughts). We love berries for so many reasons – they taste good and are easy to bake with, and they also pack a serious nutritional punch. But sweat isn’t only limited to the aforementioned situations – sweating is actually one of the healthiest things for your body, so don’t be embarrassed about your sweat – it’s a sign of good things happening inside your body! My life turned upside down when I received my celiac disease diagnosis four years ago. I’d never even heard of gluten or gluten-free food (although it was soon to be everywhere). Changing the way I had been eating for 30+ years was not really part of my life plan, but suddenly I had no choice. Or rather, no choice if I didn’t want to continue on a downward slide that was painful and potentially life threatening. Even though I was gung-ho about taking my new gluten-free diet seriously, my inner child was the first to react to this new diet. I know this because the first thing I thought of when my doctor told me what gluten was, was the fact that I would no longer be able to eat cakes, cupcakes, donuts or anything good. Anything! Tortilla Chicken Drumsticks

CHICKEN

It’s the 4th of July this weekend, and we’ve got an easy, creative party recipe for you: Tortilla Drumsticks! This is a healthy play on crispy fried chicken, but instead of the crispiness coming from deep fried batter, it comes from baked bean & rice chips. This recipe is gluten-free, dairy-free, soy-free and nut-free, and it’s fun for the whole family and super delicious! Continue reading
